2 10-oz packages of frozen chopped broccoli or 1 16-oz package.
3 large eggs
1 cup mayonnaise
1 10-oz can of cream of chicken soup (cream of mushroom or cheddar cheese soup also work well)
2 cups dry brown rice, cooked (there's a lot more than 2 cups when cooked! So I meant 2 cups uncooked)
2 cups chopped leftover meat, pork, ham, chicken and turkey work well, (it should be cooked already)
4 tablespoons onion grated, or 1 tablespoon dried
16-oz of sharp cheddar cheese shredded
Salt and pepper to taste.
Preheat the oven to 350 degrees Fahrenheit. Grease a 10x14x2 inch pan or casserole dish, a 9x13x2 works okay too. Cook the broccoli in water, drain and set aside to cool, (The frozen broccoli you can steam in the microwave is a great alternative). In a large bowl mix the broccoli, meat, cooked rice, cheese, mayonnaise, soup, onion, salt and pepper, and eggs. Then pour into a casserole dish and spread till smooth on top. Bake for 45 minutes. And then take out and eat! Serves 8-10.
